The Schmucks menu is the product of collaboration between Melbourne hospitality professionals Ben Avramides and Tommy McIntosh (from food and event specialists Tommy Collins), and chef and bagel boss Simon Winfield. This bagel dream team has developed a number of both innovative and classic bagels made in traditional European style, ranging from rye to Vegemite flavoured bagels. There’s even a gluten-free bagel so that everyone is catered for. The secret behind these tasty bagels is that they are steamed (rather than boiled), giving them a light texture without compromising on flavour.

Marmur says, “I’ve binged on bagels since I was a boy and they’ve always reminded me of my grandfather, who somehow carried his sense of humour all the way to Australia from Poland despite his hardship… He lived, ate, and loved seriously. He took everything seriously – except himself. Schmucks is my way of reminding myself to do the same.”

This philosophy is evident in Schmucks’ lunch menu, which pairs these incredible bagels with fresh, quality ingredients and perfect flavour combinations. Highlights include the Miso Schmick, which sandwiches miso salmon, wasabi peas, Kewpie mayonnaise and pickled ginger between a sesame bagel, and the Schmoozer, which combines hickory smoked beef brisket, BBQ sauce and chimichurri with a seedy bagel.

Schmucks’ breakfast bagels also make for a perfect start to the day, whether you prefer bacon and egg with tonkatsu, or sausage and egg with Kewpie mayonnaise. Those on the go can pick up a Blueberry bagel with a choice between almond butter or a lemon curd schmear.
