MARRIOTT MELBOURNE’S SUMMERTIME SEAFOOD STACK

The lavish ‘seafood stack’ (designed for two to share) was curated by Melbourne Marriott Hotel’s Head Chef Swami Nanden whose resumé includes some of the world’s finest restaurants, including Michelin-starred Benares Mayfair and Noma.

Seafood-lovers are spoilt for choice with chilli and garlic Mount Martha mussels, Tasmanian oysters, Moreton Bay bugs, crumbed calamari, smoked salmon and cooked tiger prawns.

UGO BURRATA BAR

The popularity of burrata is not waning and UGO Burrata Bar is satisfying all the cravings, now open at South Melbourne Market. With at least 10 amazing dishes on the menu at any time, the team has created a range of seasonal combinations that pair the favourite oozy cheese with fresh local ingredients, many from South Melbourne Market, to suit any taste bud and mood.

 

Starring That’s Amore Cheese burrata, UGO Burrata Bar is the destination for cheese connoisseurs, those new to burrata and simply lovers of great food. Burrata is an Italian cow’s milk cheese made from mozzarella and cream, originating from Puglia, Italy. The outer casing is solid cheese; the inside contains stracciatella and cream, giving it an oozy, soft texture.

 

So what’s on the menu? There really is something for everyone with the perfectly created seasonal burrata dishes. Menu items include burrata with toast and bagels, as well as traditional Italian ingredients such as tomatoes, peaches, peppers.

 

Co-owner Dario Di Clerico is excited to have launched the concept to Melbourne, the first of its kind in Australia. “To launch our first UGO Burrata Bar inside South Melbourne market just made sense. We have a long standing relationship with the South Melbourne Market and felt that the space deserves the very first concept of its kind.  There has been some debate around the perception by some that burrata is just a boring blob but we are challenging this with the amazing dishes we are serving up with burrata as the hero! We want to showcase that burrata and mozzarella are not only seasonal products, but delicious ingredients that can be paired up all year round.”
