Artisan baking has made a huge comeback in recent times with many artisan bakeries popping up across the country, sharing the love of the perfectly made Artisanal breads. Rustic Sourdough in Fitzroy has been one of these bakeries, making us fall in love with artisanal breads and appreciate the effort that goes into making the humble loaf of bread. More than just a bakery, Rustica Sourdough produces, not only a range of breads, it also serves up a beautiful breakfast and a range of delicious pastries. We caught up with Head Baker and founder of Rustica Sourdough, Brenton Lang earlier this week to talk about being a master Artisanal baker.
We’ve really loved the Rustica‘s Easter Hot Cross Buns. Do you have any tips for making the perfect hot cross bun?
Depending on your palate, play around with your spices, fruits, and liquids. After all you can put whatever suits your taste in a bun!
In your opinion, what’s the best way to enjoy a Hot Cross Bun?
With salted butter!
We were also lucky enough to taste Rustica‘s Easter Cronut! The balance of flavours and textures were spot on! What goes into coming up with such an amazing culinary creation?
Usually something like this will arise from Nabih and I bouncing ideas off each other, narrowing down the ideas then trailing the flavours and presentation.

How did you get into baking and discover your love of artisan baking?
I started at 17 in a apprenticeship, seems a lifetime ago. It grew into a passion when I started Artisan breads. Perfecting the product and understanding the processes and variables takes serious time and thought. I wasn’t lucky enough to work closely under exceptional bakers. Being thrown into management at 21, lots of what I know is self taught though trial and error and reading
What’s your favourite item at Rustica?
I’m a sucker for the trusty Almond croissant.
Do you have a favourite place to dine or favourite food when you’re off duty?
I get around! I like going to new places and new things but Touchwood is my local cafe and Asian is my favourite cuisine.
What is your favourite place in the world to visit and why?
It’s hard to go past the European lifestyle, range of cultures and of course the culinary experience. Italy would be the pick of the bunch, the simplistic food is hard to beat.
