Coveted Chef and TV personality Karen Martini will join the Truffle Melbourne team to deliver a mouth-watering truffle inspired take over of Prahran Market on 20-21 June.  The prestigious food festival, Truffle Melbourne, now in its second year will transform the food lover’s market into a fungi haven, complete with free cooking demonstrations with some of Melbourne’s best chefs and exquisite truffle tastes all weekend long as the official unveiling of the 2015 TruffleMelbourne festival. Karen will be joined by Masterchef alum, Alice Zaslavsky as well as a host of Melbourne’s hottest chefs with food demonstrations using truffles.
Ahead of this event, we caught up with Karen to get a low down on what’s happening at the Truffle Melbourne Prahran Market takeover.
It’s very exciting that you’re taking part in Truffle Melbourne’s Prahran Market take over. What have you got planned for truffle fans who are coming to see you?
I am doing two recipes; featuring lots of things from Damian Pikes stand. My approach is a little different to usual; I am going to the market and visiting Garys Meats to buy some Eye Fillet and then Damians store in order to buy all necessary ingredients then cooking all on stage. I wanted to show people how you can realistically cook and make two different dishes using truffles. 
What ingredients do you think work best with truffles?
Dairy showcases truffles in a rich, luxurious format with a high fat content, whereas meat is accentuated by truffles and their rich flavour. 
Any favourite recipes that feature truffles?
I am actually cooking one at the festival; an open faced filo egg tart. Its simpleness highlights the hypnotic flavour of truffles.
What’s the best advice you can give to the home cook who wants to use truffles in their cooking?
There are two ways of utilising truffles. One; you don’t cook them per say, you warm then to release their aroma. Or you can shave them raw and dress in something as simple as extra virgin olive oil and salt last minute so as not to challenge the delicate flavour of truffles.
