Bar Bouni, the newest venture from Melbourne hospitality icons Tommy Collins, has opened its doors, introducing Lebo-terranean, a vibrant new dining concept that fuses contemporary flair with the soul of Middle Eastern and Mediterranean cuisine. Inspired by founder Ben Avramides’ rich family heritage, the venue reimagines generations of culinary tradition for modern Melbourne, honouring a legacy that began in the 1950s with beloved Sydney institutions like Emad’s and Hunna’s.

Helmed by head chef Jessica Mantilla (Añada), the kitchen shines with a next-level take on the humble rotisserie. Expect succulent traditional marinades slow-cooked to perfection: harissa chicken served by the half or whole, crackling pork belly refined over generations, and a smoky, “meaty” rotisserie cauliflower paired with almond tarator and curry leaves. Each dish arrives with Bar Bouni’s signature Lebo-terranean sauces — toum, zhoug and muhammara — designed for generous smearing, dipping and sharing.

Alongside the hero proteins, the SHARIK menu offers punchy, playful accompaniments ideal for grazing: think pickled veg, house sausage, lamb and pine nut empanadas and a fresh seasonal fattoush. Over at the bar, Federico Soligno (Vue de Monde) curates a sharp wine list and Melbourne-ready cocktails, rounding out a dining experience that’s lively, generous and full of heart.

Set within Southbank’s Arts Precinct, Bar Bouni’s jewel-toned, velvet-accented interior channels nostalgic family warmth with a touch of theatrical charm. Elevated but never pretentious, it’s poised to become a neighbourhood go-to for locals, food lovers and arts-goers alike — a place where culture, comfort and a little family chaos come together under one (delicious) roof.

Bar Bouni is located at 153 Sturt Street, Southbank, Melbourne, and more information can be found at barbouni.com.au
