THE SAINT HOTEL IS RETURNING TO ST KILDA THIS NOVEMBER

St Kilda is about to get one of its most recognisable addresses back. This November, The Saint Hotel will reopen on Fitzroy Street under Refinery Group, the team behind The Angel of Malvern, reinstated as a modern local for everyone. Spread across two levels, the venue brings together a Public Bar, Santos Pizzeria and a beer garden on the ground floor, while upstairs you’ll find the Balcony Bar, private dining and an intimate cocktail and listening lounge with vinyl and DJ programming.

First built as a State Savings Bank in 1914, the landmark has lived many lives since, from pub to nightclub to restaurant. Rather than recreating any one of those eras, the new Saint is all about bringing back the attitude and energy the address has always been known for. “The Saint Hotel will be a spot you can drop in for a beer or a glass of wine, stay for dinner, meet a few friends or kick on into the night,” says Refinery Group General Manager Operations Liam Burns.

On the drinks front, expect a strong beer selection including a Saint Lager made especially for the Public Bar, local and international wines, and a cocktail list that puts a St Kilda spin on aperitivo culture. Executive Chef Justin North is behind a menu of generous pub classics alongside Santos Pizzeria’s take on Detroit style pizza, complete with pizza crust dippers made for snacking over a drink. “Every neighbourhood deserves an awesome pub, and that’s really what we want The Saint to be for St Kilda,” he says.

The fitout, with interior architecture by Studio McCue and design by Refinery Group’s internal team, leans into warm walnut, exposed brick, terracotta, brushed steel, patterned upholstery and vintage St Kilda prints, finished with custom pieces including a bespoke Saint pool table. The Saint Hotel opens at 54 Fitzroy Street, St Kilda in November 2026, and you can sign up for updates at sainthotel.com.au.
